Linux in a Nutshell: A Desktop Quick Reference -- by Ellen Siever (and others). One of O'Reilly's famous "Nutshell" books.
Linux: The Textbook -- A good all-around introduction to GNU/Linux.

Security
Linux Firewalls -- A very thorough guide to firewalling under Linux, by Robert L. Ziegler.
